The burial of the sardine consists of a carnival parade that parodies a funeral procession and culminates with the burning of some symbolic figure, usually representing a sardine. The burial of the carnival sardine is traditionally celebrated on Ash Wednesday and it is symbolically buried to the past, to the socially established, so that they can be reborn with greater force, so that a new transformed society arises.
